Mercerbis is a Japanese dessert brand that began in Tokyo. The dessert made its name in Ginza; we first introduced it in Korea through a pop-up at Hyundai Department Store, and have now settled in Yeonnam-dong.

We specialise in chiffon cake. A Japanese pastry chef makes it with no additives, from egg white and rice flour, and the cream is soft rather than sweet — both tuned to sit well beside a cup of coffee.

Three minutes' walk from Yeontral Park — a good place to sit down with a slice at the end of a walk.

THE DRIP

The running lineis our mark

Sauce is spooned over chiffon cake baked in a fluted tin, and it runs slowly down the ridges. Toasted almond flakes go on the caramel, pistachio on the matcha, and fresh fruit in season.
